Somewhere Over the Rainbow

Last Thursday, I injured my back. It had been hurting a little all week, but suddenly got a lot worse. I was in so much pain that I was unable to work, so I took the rest of the day off and went to the doctor. He concluded that I had strained a muscle in my lower back and recommended that I rest for a couple days and take some anti-inflammatory meds, as well as muscle relaxers. 

By Friday evening, I was feeling well enough to go out to dinner. Jeff took my sister and I to the Bluebird Cafe in Stanford, Ky. It was my second time eating there and their first. Everyone was pleased with their order and we will probably be back in the future. Jeff got a burger and my sister and I each ordered pasta. We also got their homemade chips as an appetizer. The kitchen is partially open, so it was neat to watch them prepare the food from fresh ingredients.

On Saturday, I went fishing in our pond with Jeff and Matt. Below is the picture of the only fish I caught. 

After fishing, we went to Al's Bar in Lexington to listen to one of their friends' band play.

In other news: I have approximately two weeks of summer work left. This means that I am again on the search for a new job. I have applied to one job in particular that I am pretty excited about. It would be full-time and the pay is quite a bit more than what I am currently making. Plus, it has benefits and is related to my major. I should find out whether or not I got the job tomorrow.I will do my best to keep you all posted. Wish me luck!

Happy Blog-iversary!

First of all...

 Happy 1st Anniversary Tidbits From TwentySomethings! 

I just realized that exactly one year ago Granny Eyre made the first post on our blog. I'm really excited that we have stuck with this for a whole year and have been fairly dedicated to keeping it up-to-date. I hope we can continue to keep it that way. I have never written on a blog so this has been a new experience for me, and I really enjoy it!

On to my blog post...It's the 21st day of my summer break. It's been great!! I've been getting into a variety of activities including seeing some really great new movies, shopping with my Mamma, going riding, fishing and more.

My beau and I don't go to the movies often, but we do enjoy going to the theater occasionally when there's a movie we're wanting to see. This weekend we set a record, we went to see a movie on Friday night and then went again, to a different theater, on Saturday night. First-run movie theaters are expensive, but it is so nice to kick back in their comfy chairs in the chilled room and watch a movie on the big screen. We saw Tommorowland and Age of Adaline. They were both Awesome!

Tommorowland just came out last week. Most people know I have an obsession with Disney and this Disney movie didn't disappoint. It's a really cool story; the actors are good, the videography is cool and the way the story unfolds keeps you wanting to know more. I'll just let you watch the trailer here to find out more about the story. I recommend that you see it if you're into Disney and/or sci-fi.

Age of Adaline has been in theaters for a month now. Blake Lively (who I love from Sisterhood of the Traveling Pants movies) plays the main character. She is stuck at age 29 and she lives nearly a century being the same age; her appearance stays the same, her body remains functioning like a 29-year-old's body would, while everyone around her ages normally. It's full of history, love and romance. We actually saw the 9:55 PM showtime and I stayed awake through the entire movie (well...at the very end I may have drifted off for a couple of minutes), but still...that's really saying something for me! It was that good! I liked this even better than Tommorowland! The trailer is here. Seriously, you should see this movie! Have you seen any really great movies recently? 

In other news, I have been spending some time outside with my beau. We went riding his four-wheeler down in this picturesque creek/wooded property called "Jig-Water". He drove his old farm truck down there with the four-wheeler in the back. It was very bumpy and rough at times. We rode down a rocky road and parked beside the creek. Then we took the 4-wheeler out and rode around the woods and through the creek for a couple of hours. It was awesome! When we were finished, we loaded back up and crossed the creek and drove to town to get wings for dinner. It was pretty neat and it was a beautiful creek. Plus, riding is really fun! 

Last weekend we went fishing. It was another beautiful outdoor adventure. We were at a pond, on a gorgeous, hilly piece of land (my neighbor's). We caught several large blue-gill and a couple of bass. It was a successful fishing trip; although we didn't keep them because we had told my neighbor's we wouldn't be. It would have made a delicious meal though!

I've been trying to take more walks, both with others and with the dogs. It's been really great weather for being outside too! I hope it stays like this for a while longer. Speaking of which, I hope the weather is lovely for the 5th annual Twenty-Somethings camping trip!

So much fun!

There have been so many reasons I should have made blog posts these past couple weeks, but I haven't felt motivated to. So, I will make this blog post very full of news and adventures I have been having in the month of August and early September!

I've been baking. I made blueberry scones recently and they were delicious! I froze about half of them to get out as I crave them and they freeze really well. I just pop them into the microwave and they're a tasty breakfast. Everyone in my family was impressed with them. If anyone is interested in making some, I used this recipe!

The state fair. I had loads of fun with my parents and my beau at the Kentucky State Fair. It has been several years since I had been to the fair so it was a real treat to go this year. We had so much fun checking out the animals, entries & exhibits, and watching performers!

Exploring Luh-ah-vul. Labor day weekend, my beau and I went to Louisville to celebrate the anniversary of our first date-- we've known each other for 1 year! :) We ate lunch at The Cheesecake Factory which was scrumptious and walked around St. Matthew's Mall. Then we went to downtown Louisville where WorldFest 2014 was going on. There was a large number of people at this festival and some interesting cultural performers along with numerous vendors. On the walk back to the parking garage we needed to find a bathroom and we happened upon a really interesting hotel by turning down Main Street. It's called 21c Museum Hotel and it was an eccentric place. We went inside and were unsure what this place may be. There was so much neat artwork and exhibits that we thought it was just an art museum, then we realized it was a hotel and a sort of modern art museum. It was a fascinating place. If you're ever near Main Street in Louisville I would recommend stopping in just to look around.

Fun Outside. 
Last weekend my beau finished up cutting and baling his hay. I decided to help him out and on Saturday I went to his farm and helped him move the hay out of the field. We both started on tractors, then when we got farther out into the field we used his truck, "Bondo", and trailer to haul several bales at once. We spent from mid-afternoon through the entire evening hauling hay bales. It was tiring but I was glad I could help him out!

To celebrate Labor Day my beau, his cousin and I took a trip to a nearby creek with the ATVs and went riding in and around the creek and on surrounding trails. We really enjoyed the riding and the scenery was beautiful.

The big catch. Yesterday we took a fishing trip with the beau's grandpa and cousin. I reeled in the biggest fish of my life last night and it was very exciting! It was a 5 pound large mouth bass; it's given me a little bit of a fishing bug...We hope to go night fishing soon!

What a Weekend!?

This is what I call a weekend!

What an awesome three-day weekend! As Captain Something Fun & Granny Eyre have mentioned, most of the group attended a party at Martha S.'s house on Friday. Martha S. decorated and hosted us in some very cute ways--she's true to her namesake. Everyone brought some scrumptious food, too. I enjoyed every bite! Jason and I brought a cookie cake decorated as a flag. In case anyone is interested, you can find the recipe here. I was pretty proud of how it looked so I thought I should share our photo of it:

Saturday was also very fun! Jason and I went fishing in a creek. It was like nothing I'd ever experienced. First of all the creek was deep, I guess I'm used to shallow creeks. We wore old clothes (including tennis shoes!) and waded into the creek. When we got out deep enough we started the fishing. We would fish for a while in one spot and then we walk down the creek a little farther. Unfortunately I didn't catch anything but sticks and leaves, but Jason caught several small-mouth bass, a sun-fish and some others. I did get my exercise in though, because we waded a long way down the creek and then had to walk/wade back (probably about a mile total). The water got up to our necks at points; it was really cool water too. A very interesting experience, indeed. Hopefully I'll catch something next time I go! 

Saturday evening Jason and I went out on Herrington Lake to swim and watch fireworks. Apparently the lake puts on a fireworks show every year--WOW. The lake was packed with boats and I can see why. We didn't have the most ideal position on the water for the whole show, but by the end we were in a good position to see most of them. I was in awe of the experience. I can't wait to see it again next year!

Sunday was nice too. Some exciting news from the day...Jason bought his first calf from my dad! We are still deciding on her name, any suggestions? 

Too bad weekends only come around once a week!

Fish 'N Chicks

About a month ago, one of our hens decided that she was ready to nest so we let her keep 11 eggs.The incubation period for chicken eggs is 20-21 days, meaning that the baby chicks were supposed to hatch by June 8th (today).  As of this afternoon, 9 of the 11 eggs had hatched, just like clockwork. You can imagine my delight when I went out to the coop this morning to find these cuties staring back at me:

 In other news, my dad caught a huge catfish from our pond this morning. It was so heavy that it had to be lifted out with a net. We are unsure of its exact weight, but we believe that it was approximately 13-20 lbs.

After the catfish was filleted, we let it to soak in salt water. Then we dipped it in buttermilk and rolled it in a batter made from cornmeal, salt, and black pepper and fried it in canola oil. Five of us ate the fish, and there was plenty more to go around. I couldn't believe that just one fish could feed that many people!

 I also made some cornbread "hush puppies" to go with the catfish. I chopped up some green onions to go in them and fried them in a skillet. I don't really go by a recipe, but could probably come up with one if someone was interested.

 All in all, today was a pretty eventful day. I was hoping to have a lazy day inside the house, but as plans sometimes do, that didn't work out. However, I would much rather have the day that I had than be lazy like I was planning.
